Gourmet food substitute?

For my birthday party i want to do “fancy food”. In a magazine i saw a recipe for candy sushi and i’m wondering if there are any other gourmet food substitutes like that. For things like wine and caviar.

Does it have to look like the food or taste like it? For wine you can just substitute grape juice, and for caviar, tapioca sorta looks like it.
